Birthday Groove for a cause

Tita Trillo’s birthday celebration was dubbed “Simply French” for the reason that Pierre Clerget from Castel, the largest wine producer in France, introduced simple wines from the Lanquedoc, Southwest France, and spiced the dinner with great wines that truly captivated everyone’s heart.

Her dear friends and partners in the hotel and restaurant and supermarket trade came with envelopes bearing personal checks and cash for the Orphans of Mother Theresa in Tondo instead of luxurious gifts for her as she requested. She was so touched with their thoughtfulness and generosity. As people gather around before the sit-down dinner they were lavishly enjoying Paul Valmeras Rose, a great appetizer wine with good acidity, fresh and fruity, easy to drink.

The dinner wine degustation which was planned by her daughter Roselyn, a Cordon Bleu Chef started with TERRINE DE FOIE DE VOLLAILLE- Salad de persil, menthe et capres, toast (Parsely, mint salad with capers, toast) followed by SOUPE DE CHAMPIGNONS- Crème de champignons avec Parmesan et croutons (Cream of mushroom soup with Parmesan, croutons). The wine Sommelier paired it with Paul Valmeras Blanc, a wine so delicate and lively on the palate. Then the main course was a choice between ROULADE DE SAUMON ET CREVETTES- Puree de pommes de terre et rucula, tomates sechees avec bulgur, asperges avec sauce au vin rouge (with arugula-mashed potato, dried tomato bulgur, asparagus in red wine sauce) or CONFIT DE CANARD ET AGNEAU-Duo decanard et d’agneau confit, rissoto safranne, pommes poches avec reduction de raisin et vinaigre balsamique (Duo of duck and lamb confit with saffron rissoto, poached lady apple and balsamic grape reduction). The surprise was the pairing of the Cuvee Jerome, a perfect blend by Tita Trillo and Pierre Clerget which offered a range of harmonious, round and well-balanced fresh wines from the Herault region in Lanquedoc, a perfect accompaniment with the Roulade de Saumon and the Confit de Canard. As the party carried on, the guests were enjoying the jazz music by the Soulful Band with their renditions of several love songs.

We were so charmed with the extravagantly prepared dinner when Pierre Clerget came up with another bash of two select wines that he hand-carried from France. First, we had Saint-Chinian AOC from foothills of the Pyrenees mountains in Lanquedoc a wine so supple and fleshy with aromas of red fruit, laurel and touch of spicy notes, perfect for our cheese platter. The dessert TARTE AUX POMMES-Frangipane de noix et butterscotch (with walnut frangipane and butterscotch) came with Seduction de La Beaugraviere, a sweet wine that ended our dinner with sweet songs in our hearts. What a wonderful birthday party indeed!
